It's All About The Chicken

are but a few chicken behavioral descriptions.

Which has absolutely nothing to do with what we are talking about today.
No, today's chicken is all about ingredients and cooking.




Basic chicken cooking stuff.

I use bone in chicken pieces, you can not beat the flavor

I keep limes and lemons in my refrigerator. My mouth waters when I open up my produce bin and see
2 limes and 4 lemons. I know I can do almost any fish or chicken dish when I have them.

Staple Ingredients for Chinese cooking – Lee Kum Kee, found in many grocery stores. Listen to me now, this whole Asian ingredients thing was stopping me from dabbling in Chinese cookery for years.
What brand of this what kind of that, I googled, I read, I talked to anybody that looked Asian in the
Asian super market lane, I went to Japanese markets, Chinese markets, forget about it now. Lee Kum
Kee is a very recommended brand plus you can find it while you grocery shop.
Job Done we be movin on!

When a recipe calls for “green chili” they're looking for the fresh and common ones found in your area. Leaving the amount of heat desired up to the preparer. I keep jalepenos in the fridge all year long because it is my “go to chili” but I certainly will use many others.

Mild Chilies – Anaheim and California Green Chili
Little Hotter - is the Poblano
Hot Chilies – Jalapeno and Serrano

Cut the chili length wise and remove all seeds. If your just beginning to cook with the hotter chilies
use just half of it at first until you see how much heat it brings to a dish.

I keep fresh whole ginger in the freezer and break off a piece as needed. Done! I don't have to figure
out if I have this or that when I know I keep things on hand along the way.

I keep mustard on hand French's Yellow, Dijon, and course ground. Useful in many chicken dishes.
