Baked Chicken
This is my favorite baked chicken. But
then I have no problems with real, true butter.
Chicken pieces: I use whatever I have,
legs, thighs or breasts.
Cold butter: if the pieces are big
throw 1/2T per piece on the middle of the chicken, or pour some olive
oil on each piece and rub it over the whole thing with your fingers.
Sprinkle with salt and pepper
Put chicken on a baking sheet, I
always, always use aluminum foil on the pan. It just saves on clean
up!
Bake at 375 degrees for an hour and 15 minutes. Yeah yeah, so what, I over bake it. Depends on the size of the
chicken pieces. If they are large like a breast go an hour and a
half. If smaller go an hour and 15 minutes. Let chicken set for a few
minutes after baking. Turn once halfway through baking.
You can always turn this into a meal by
tossing in some sweet potatoes, carrots or whatever vegetables you
want. Put vegetables under the chicken, around the chicken, it don't
matter.
Who Knew Chicken Could Be This Good
Ingredients:
½c Dijon mustard, hey if I don't have
uppity Dijon I just use the plain yellow stuff
½c honey
¼ c olive oil, to be honest I use less
and less of this expensive stuff and go with Canola oil, ( I do take
a couple of Omega-3 supplements daily)
1T salt
8 pieces of chicken
Heat oven to 350 degrees F. Like you
need to know the freaking F part. Put mustard, honey, oil and salt
in a bowl and whisk it, stir it, shake
it, whatever suits your fancy. Pour over chicken to coat.
Place chicken in casserole or
13-by-9-inch baking dish. Bake 35 minutes turn over the pieces bake
another 35 minutes. Your done.
Oven Baked Chicken Fajitas
Ingredients:
2 cloves garlic, minced
¼ c lime juice
1 lb or more boneless, skinless chicken
breasts, cut into strips, these go on sale every 2 to 4 weeks at the
grocery. Pick up a few lbs and freeze em bitch!
2T Canola Oil
1 or 2t ground cumin
--can add if you want-1/2 t garlic
powder and 2t chili powder, I get the cheap 50 cent bottles at
Wal-mart
¼ t salt
1 medium onion, sliced
1 green bell pepper
1 red bell pepper
1 large tomato
12 flour tortillas
Toppings, sour cream, avocado, salsa-if
desired
Put chicken pieces in baking dish.
Combine the lime juice and garlic. Pour the mixture over the
chicken, toss it to coat. Cover and
marinate in refrigerator, (did I really? Really have to say to
refrigerate the chicken?) Marinate for ½ hour or so.
Citrus have acids that break down the
tissue in meat. The lime acts as a tenderizer, and adds flavor.
2 for one!
Preheat oven to 400 degrees.
Now put some aluminum foil on a baking
dish and if you want spray it with Pam or some spray like that.
Put the seasonings on the chicken and
mix it up. Put everything on the baking dish, chicken with the
seasonings and all the vegetables. Bake
30 to 40 minutes. Serve on the tortillas with toppings.
Thai Me A River Chicken
Ingredients:
4 chicken thighs
one bunch cilantro, yeah yeah I know,
both of my daughters hate the stuff, if you have that problem
toss a teaspoon of dry coriander in the
dish.
Zest and juice of 2 limes (should
already be in your fridge)
1 green chili, deseeded (should
already be in your fridge)
2T Canola Oil
1 thumb-sized piece of ginger-grated
(in your freezer yet?)
3 cloves garlic, peeled and smashed
Put chicken, cilantro (just put it on a
chopping board and cut it in some pieces), and everything else
into a large baggie and let it
marinate. Put this bag in a bowl so if it leaks you ain't got a worry
in the
world. Marinate this an hour or a day.
Cooking chicken ain't rocket science!
Heat oven to 375 degrees F. Place some
aluminum foil on the bottom of the baking sheet throw on
the chicken. Bake with some vegetables,
something like baby bok choy, cut up napa cabbage and even some
broccoli. Toss veggies in a teaspoon or 2 of olive oil, salt and
pepper.
Bake 30 minutes turn over bake 30 to 45
minutes longer, depending on the size.
As close as I can tell per serving...
